2 c. diced peeled beets
1 c. orange juice
2 T. honey
1/8 tsp. ground red pepper
2 T. red wine vinegar
1-1/2 T. olive oil
1/4 tsp. salt
2 cloves garlic, minced
2 tsp. cumin seed
4 beef steaks
1 can mandarin orange sections
6 c. fresh arugula

Combine beets, juice, honey and pepper in small saucepan; bring to boil, then reduce heat and simmer 40-45 minutes until beets are tender. Drain, reserving cooking liquid. Heat cooking liquid over medium-high heat until reduced to 1/4 c.; cool slightly. Whisk in vinegar, oil and 1/4 tsp. salt; set aside to use as dressing. Press garlic and cumin seeds evenly into steaks. Grill or cook steaks to desired doneness, turning occasionally and seasoning with salt and pepper. Toss beats, orange segments and arugula in large bowl; drizzle with the dressing. Serve with steaks.
