Ingredients:
1 c. fresh bread crumbs
4 garlic cloves, minced
1/2 c. flat leaf parsley, chopped
6 T. grated Parmesan cheese
1/4 c. chopped fresh thyme or 1 T dried thyme
2 tsp. grated lemon peel
1/2 tsp. salt
6 T. butter, melted, divided
3-4 lbs. salmon fillet

Directions:
Preheat oven to 350 degrees. Coat a 13×9 baking dish with cooking spray. Combine bread crumbs, garlic, parsley, cheese, thyme, lemon peel and salt and mix well. Add 4 tablespoons of butter and toss lightly to coat crumb mixture. Set aside. Pat salmon dry and place skin side down in prepared baking dish. Brush with remaining butter and cover with crumb mixture. Bake for 20-25 minutes or until salmon flakes easily with a fork. Garnish with lemon slices.
