Serves 6

Ingredients:
2 long green onions, finely chopped
10-12 sprigs fresh parsley, finely chopped
10-12 cloves of garlic, finely chopped
1-2 fresh cayenne peppers, finely chopped
2 lbs. raw wild-caught shrimp, cleaned and cut into 1/4-inch pieces
2 c. all-purpose flour
2 c. cold water
2 T. baking powder
salt to taste

Directions:
Mix flour, water, and baking powder together in bowl until all lumps disappear. Add the rest of ingredients and mix thoroughly, then chill in refrigerator until firm. Using a tablespoon, drop mixture into 325 degree deep fryer until cakes are fully cooked, approx. 4-5 minutes. Add your favorite dipping sauce on the side.
