4 eggs
flour, for dredging
salt and pepper
1/2 c. bread crumbs
2 eggs, lightly beaten
oil for frying

Cook the eggs in boiling water about 6 minutes. Drain and cool the eggs in icy cold water, and remove the shell. Put the flour in a bowl and season with salt and pepper. Put the bread crumbs in a separate bowl and the beaten eggs in a third bowl. Coat the eggs in the flour mixture, then the beaten eggs, and finally the bread crumbs. Heat the oil to 350 degrees. Fry the eggs for about 1 minute, or just until the crust is lightly browned.
