6 boneless, skinless chicken breasts (4oz each)
1/4 tsp. paprika
1/2 lb. fresh mushrooms, sliced
1 T. butter
1/2 c. chicken broth
3 green onions, chopped
1 garlic clove, minced
salt and pepper to taste
1/4 c. shredded part-skim mozzarella cheese

Arrange chicken in a non-stock baking dish. Sprinkle with paprika. Bake uncovered at 350 for 15 minutes. Meanwhile, saute mushrooms in butter add broth, onions, garlic, salt and pepper. Bring to a boil. Pour over chicken. Bake 15 minutes more. Top with cheese. Bake 5 minutes until cheese is melted.
