2 bunches kale, about 1 lb.
1 c. currants
juice of 1/2 an organic lemon
4 T. extra-virgin olive oil
sea salt to taste
1/2 cup grated Parmesan cheese

Wash kale; remove the center ribs and stems, chop finely in a food processor or by hand. In a bowl, combine all the ingredients until well blended. Best if refrigerated overnight to allow flavors to blend.
