Lena Macias provides this recipe combining luscious guacamole with homemade coleslaw. Serve it as a salad OR use it as a topping on burgers or fish tacos. What fun!

For Guacamole:

3 avocados, diced
lemon juice (1/2 lemon)
3 tomatoes, diced
jalapeno, diced (to taste)
cilantro, chopped (about a handful)
garlic, chopped (2 cloves)

Mix up and set aside.

For Coleslaw:

purple cabbage, 1/2 head, shredded
green cabbage, 1/2 head, shredded
1 tsp. apple cider vinegar
1 T. lemon juice
2 cloves garlic, chopped (more or less to taste)
1/2 c. mayonnaise
1 T. caraway seeds

Stir together and then gently add the guacamole.
