Make homemade chips from root vegetables like turnips, parsnips, potatoes or beets.
Begin by slicing them very thin. Toss with olive oil until coated and add salt to taste (she recommends 1/4 tsp. per 1 c. slices) Mix well and place the slices on a baking sheet in a single layer. (Take care not to pile them) Bake for half an hour in a 350 degree oven until they begin to brown. Allow to cool. Store in an airtight container for a day or two and re-crisp by warming in the oven.
