Ingredients:
1 T. olive oil
1 shallot, thinly sliced
2 T. honey
2 T. Dijon mustard
4 slices sourdough bread
1 apple, thinly sliced
1/2 c. fresh spinach
thinly sliced or shredded cheddar

Directions:
Preheat a nonstick frying pan over medium heat. Add the olive oil and heat until simmering. Add the shallot, and cook frequently, stirring, until lightly browned and crisp, about 5 minutes or so. Remove from heat and set aside. In a small bowl, whisk together the honey and mustard until smooth; set aside. To assemble: layer the apple, spinach, cheese, shallots and a layer of honey mustard between two slices of sourdough bread. Using the same nonstick fry pan as before, grill the sandwiches in small amount of butter until golden brown and crisps on each side (about 2-3 minutes per side) over medium heat. Serve immediately.
