8 oz. cream cheese (room temperature)
1 T. mayonnaise
1/2 c. pesto
1 1/2 c. cooked/peeled shrimp
1 large tomato, chopped & seeded
grated or crumbled cheese (Swiss, Mozzarella, or your choice)
chopped green onions, parsley or chives
crackers or baguettes slices

Beat 8 oz. cream cheese (at room temp) with 1 T. mayo. Spread in an even layer on a serving platter. Spool 1/2 c. prepared pesto over cream cheese, leaving about an inch as a pretty white border. Distribute 1 1/2 c. of cooked and peeled chopped shrimp over the pesto. Top with 1 large tomato, chopped and seeded. Sprinkle with grated or crumbled cheese (mozzarella or Swiss or another of your choice) and chopped green onions, parsley and/or chives. Cover and refrigerate until ready to serve. Serve with crackers or baguette slices.
