Recipe: Easy Lemon Curd

Ingredients:
5 eggs
1 c. sugar
1 stick butter
1/2 c. lemon juice
1 T. lemon zest

Directions:
In a small saucepan, combine all ingredients using wooden spoon to stir as it comes to a simmer. Continue to simmer for 5-7 minutes until mixture becomes thick and smooth. Cool and use to dress up anything from pancakes to pound cake.
